Chow Chow Bio: Madison Park Cafe's Rich Coffey

I'm sure Madison Park Cafe has rich coffee, but they also have Rich Coffey, celebrated chef and Washington State's first certified cicerone, who holds forth on organic food and what being a cicerone means in this week's Chow Bio.
