Still Hungry?

cookies.jpgOr just bored? Let me suggest my aunt Astri's Potato Chip Cookies:

3/4 cup butter
3/4 cup sugar
1 egg yolk
3/4 cup finely crushed potato chips
1 tsp vanilla
1 1/2 cup flour
1/2 cup chopped pecans (or cashews or walnuts)

Cream the butter and sugar, then add the egg yolk and vanilla.
Mix in flour, potato chips, and nuts.
Roll into small "walnut-sized" balls, then roll in granulated sugar. Flatten each ball with the bottom of a glass.

Bake 12 mins at 350 (or 9 mins on a non-stick sheet).

i don't doubt they are yummy. but i want to meet the first person who said "yaknow what? i think potato chips would make excellent cookies." because wow.

they are really really good. buttery and sweet, and the potato chips make them crunchy and salty. hope your day gets better!

yuk

stick with the good old fashioned oatmeal cookies with added nuts, raisins, fresh spices and some sour cream in the beginning mass

I bet they're fantastic.
I don't have any potato chips though. I wonder if blue corn chips would work...

My Grandmother (RIP) used to make these - they were fantastic. Lindy, you should try bacon chocolate chip cookies. Mostly they're fun to shock people, but they're also yummy.
