Thanksgiving Recipe of the Day: Perfect Turkey Gravy (Recipe adapted from Martha Stewart's Cooking School by Serious Eats; photo via MarthaStewart.com.

Ingredients

For the stock:
Reserved giblets and neck from turkey
3 tablespoons unsalted butter
2 celery stalks, coarslely chopped
1 medium carrot, coarsely chopped
1 leek, white and pale-green parts only, coarsely chopped and well washed
1 medium onion, peeled and coarsely chopped
3 sprigs thyme
3 sprigs flat-leaf parsley
1 sprig rosemary
1 fresh or dried bay leaf
5 whole black peppercorns
1 quart water

For the gravy:
3 tablespoons pan drippings, reserved from turkey
3/4 cup dry white wine
3 tablespoons all-purpose flour
Coarse salt and freshly ground pepper
Procedure

Make stock:
1. Trim fat and membranes from giblets, then rinse giblets and pat dry.

2. Melt butter in a medium saucepan over medium-high heat. Cook celery, carrot, leek, and onion, stirring fairly often, until they begin to brown, 7 to 10 minutes. Reduce heat to medium.

3. Add giblets, neck, herbs, peppercorns, and the water. Cover and bring to boil, then reduce heat to medium-low. Cook, uncovered, until reduced to about 3 cups, 50 to 60 minutes.

4. Pour mixture through a fine sieve into a clean medium saucepan and keep warm over medium-low heat.

5. Roughly chop giblets and shred meat from neck with a fork (discard other solids).

Deglaze roasting pan:

6. Place reserved roasting pan over two burners. Add wine and bring to a boil, stirring with a wooden spoon to loosen any browned bits on bottom of pan. Remove from heat.

Make gravy:
7. Heat reserved 3 tablespoons pan drippings in a medium saucepan over medium heat. Add the flour, whisking briskly to combine, then continue whisking, cooking until mixture is fragrant and deep golden brown, about 9 minutes.

8. Whisking vigorously, slowly add hot stock and bring to a boil, then reduce heat to a gentle simmer.

9. Stir in reserved deglazing liquid, pan drippings, and giblets and neck meat. Season with salt and pepper. Simmer, stirring occasionally, until the gravy has thickened to the consistency of heavy cream, about 20 minutes.

10. Strain through a fine sieve into a saucepan (discard solids) and keep warm over low heat. Season with more salt and pepper just before serving.

The Metro story was interesting. I saw a woman throw a luke warm cup of coffee into a bus drivers face once. We waited for the cops to show, but by then most of the witnesses got off the bus and walked away, I think only three of os stayed behind to talk to the cops. We were able to tell the cops which house the woman ran into since the driver couldn't see.

The buses are dangerous, in part, because riders don't want to get involved.

Yes, yes. Be very afraid. The buses will kill you.

Public transportation is much safer than driving a car, and Seattle's buses are safer than a lot of other metro areas' transportation. This kind of reporting is what causes middle class white people with kids to move to the burbs taking their taxes with them and doing further harm to the city.

In my family we always put little slivers of hard-boiled egg in our turkey gravy. Everyone I've ever talked to thinks that's the weirdest damn thing they've ever heard, but it's not Thanksgiving with no eggs in the gravy!

How'd you like to sit on that jury? That woman caused the death of an emotionally volatile teen-age girl in a cruel and sadistic fashion, but to convict her of violating her Myspace user agreement? I don't know... If she had done the same thing that didn't end in a child's death, she would never have been brought to trial. This is a classic case of trial by public opinion. But then again: fuck her! She deserves whatever she gets.

it seems like she (myspace) was dealt with appropriately; the sentence, not cruel and unusual. it was fortunate that there were laws in place that would allow justice to be served.

It would make me think twice before I lied about myself on MySpace.

In the bus story it doesn't say how many assaults have occurred this year, or did I miss it? It may be that since we now have transit cops, things are a lot better. The assault I witnessed happened on a #71 headed east on 65th, on its way to Wedgewood. The assailant was a white, very well dressed woman in her early 20s. I think she was mentally unbalanced because she kept calling the driver a stupid N*gger. The bus driver was also white.

elswinger - re:myspace. well, don't be an over-reactionary on the other side. she would not have been sent to trial if she was merely guilty of a lie. it is silly to conclude that what we should take from this is to be careful about lying on myspace. there was so more more at play then just a lie.

I realize that infrequent, but thanks. I actually don't lie on facebook or myspace because I don't see the point. If you want to make friends, why start off with a lie.

I don't think this woman actually thought the girl would kill herself, but what exactly did she think would happen. If she doesn't get jail time, she should have to where a t-shirt that says "If you can read this, I give you permission to slap me in the face and/or spit on me."

@3, how do you figure buses are safer than cars? Buses drive at comparable speeds and have no seat belts or airbags...

i love the Obama's and how their kids will do chores. they took their girls to a homeless shelter yesterday and had them working in the food line feeding people in need. these are good parents, teaching their children how to be responsible for themselves and to contribute to their community (THEY'RE RAISING COMMUNITY ACTIVISTS SARAH PALIN SO SUCK IT!!!). you know how else raised her children to do the right thing and to give back? Jackie Kennedy. I think the Obamas may be the best first family ever. though Jimmy Carter did have Amy go to public school...

SECRET to perfect turkey --- ready ---let it thaw, sit it in the roaster, lots of pepper from the can and onion salt on the outside, no stuffing inside, tent with foil which is crimpted on the roaste pan edge, sit in pre heated oven, 310 degress, let it bake for 5 hours.

PERFECT, with no work at all, try not to get too drunk while waiting, sit it out of the oven for 20 minutes, find very sharp knief and carve a lot, gravy and mashed potatoes and perfect turkey, great cran berries and greek olives, half a nuked yam ---- happy after dinner nap and now a movie.

SAFEWAY CHEAPEST WHICH THEY SELL IN THE MILLIONS - YOU BET THEY ARE GOOD - FUCK THE TURKEY SNOBS ((( 27 CENTS A POUND ON SALE, 5.00 AND CHANGE, WOW))

@11,

Because not as many people are injured or die on buses. Although I don't know how those numbers would work out if people used buses as much as cars.
