Shiro's Sushi Kashiba Is Open

Ever since beloved chef Shiro Kashiba left Shiro's, the Belltown restaurant where he worked behind the sushi bar for 20 years, people have anxiously awaited his next move. As of yesterday, Shiro's new restaurant, Sushi Kashiba, is officially open in Pike Place Market. Here Shiro continues making pristine, simple, edomae-style sushi, much of it sustainably and locally sourced. The best seats in the house are those at the sushi bar, where Kashiba himself will serve you and teach you how to eat properly. Be prepared to wait in line.

Optimism Brewing Company Opens This Saturday

A massive new brewery is set to open this Saturday, December 5, on Capitol Hill. Optimism Brewing is 16,000 square feet of space dedicated entirely to beer. In an attempt to make beer more accessible, Optimism foregoes naming their beers after styles such as lager or stout, opting instead for names such as “One” and “Black.” There’s no food service, but a rotating cast of food trucks will park in Optimism’s courtyard and diners are allowed to bring their own food (or have it delivered to the brewery). Of note: Optimism is both cashless and tipless, so bring plastic and know that prices include both taxes and service. Capitol Hill Seattle has lots of details (and photos) here.

Din Tai Fung and Redhook Brewery to Open Projects Downtown and on Capitol Hill in 2016

Two big announcements this week: Taiwanese-based Din Tai Fung, whose xiao long bao (aka soup dumplings) inspire fervent devotion in Bellevue and the University Village, will open a third Puget Sound location on the fourth floor of Downtown's Pacific Place shopping center next year.

Also, Redhook Brewery has announced that they will open a brewpub on Capitol Hill's Pike Street, in the Pike Motorworks building, in the fall of 2016. Like the Starbucks Reserve Roastery and Tasting Room, which is located just five blocks down the street, Redhook, Washington's largest brewery, says the new brewpub will focus on small-batch, craft products. The ten-barrel brewing system they plan to install will brew beers only available at the pub, and feature collaborations with local companies like Caffe Vita.
