I mentioned in a previous comment that I tried contacting several authorities including the USDA to lodge a complaint against what I felt was spoiled chicken and fish being sold at some markets. Whether this was due to being too long on the shelf or kept at too warm a temperature, I don't know. In one case the meat was obviously rotten.
However, there was no guarantee of action or follow up. The other side of the coin is -- when I'm at a supermarket, I rarely see people buying raw foods -- meats, vegetables...of any kind. Do people cook any more?
Maybe all this meat on display is pro-forma...just a way of getting the subsidies paid. I now only use an archipelago of real butchers and pay the premium price to get what I believe to be real steaks, and other cuts of meat. It's all I can do.
