I wonder if it is ethical to directly quote someone's Facebook post on The Slog when there is, at least theoretically, the presumption that access to one's post is limited to an agreement between particular users. Facebook is not a blog. Not sure about this.

It's pretty dishonest to say that tipping will disappear, it's a cultural artifact that will not evaporate with increased consumer costs. He pretty much implies that a lot of workers would do worse with a $15 min wage, but that includes some very non-data driven assumptions.

Technically, if a person posts and the privacy setting is public, the post is fair game. Ethically, it's never a bad idea to check with the person whose comments are being distributed to see if its okay with them.
