My problem is trying to decide which wine goes best with Bigfoot. I mean long pork usually works best with a Chianti, but I think a nice crisp BC white, like the Pinot Gris from a certain vineyard in the Okanagon, would match it better.
Any thoughts?

It's likely gamey and salty. I'd marinate it for a while to cut the salt and then try it with nice cool climate Syrah, probably a Hermitage. One doesn't eat Yeti every day, so one might as well open a decent bottle to have with it.
So, should I get an Australian Syrah, then, or go with one from Northern California?
