<p>For uncooked bacon, wooly pigs jowel bacon is hard to beat.  If you like thinner stuff nueske's bacon (available at metropolitan markets) is really good.  I find skagit river ranch a little too lacking in smoke for myself.</p>

<p>The absolute best bacon is at my house though.  I made 5 pounds of it from scratch this weekend.</p>]]></description>

Close to the crisp, light texture you'd get at home slow baking it in a low oven for an hour or so.  Good fat/meat balance.  Not soggy or teeth breaking, just crumbly crispy with honeycombed fat.  mmmmm bacon.....</p>]]></description>

<p>I second Portage Bay Cafe, though a lot of days I just don't want the pepper.</p>

<p>I do like the bacon at the 14 Carrot Cafe.</p>

<p>And also up in Bellingham where I spend half my weeks now, Arlis's usually does a good bacon, but the last time they overcooked it.  </p>

<description><![CDATA[<p>El Greco.  It's nice and thick (they slice it themselves), made from good meat, and done with a press so it's flat and evenly cooked.</p>

<p>There's some variation depending on who's in the kitchen and how busy they are, I've had the best luck with Friday brunch.  As a bonus, they've also got my favorite scrambled eggs in Seattle...</p>

<p>Geraldine's Counter down in Columbia City is owned by the same folks and has similar bacon, but I think the scrambled eggs are slightly different.</p>]]></description>

for the best bacon cocktail get a manhattan at moxie's on queen anne which is garnished with a bacon lollipop..<br />
who thinks of these things ?..<br />
 and a strong contender is the breakfast side pork they serve at monsoon's on 19th for weekend brunch ( it used to come with duck eggs over easy.. but now it's served alongside organic chicken eggs, and a side of brioche french toast..)</p>]]></description>
