Jensen's Smokehouse up just North of Greenwood and Holman Road. They make the best bacon I've ever tasted.

They also have bitchin jerky.

I like the bacon at Hi-Life. It goes perfectly with their decadent Fancy French Toast. Salty meets sweet and takes years off your life.

I like the bacon at Patt's egg nest in crown hill off holman. Thick, not fatty or greesey. I wonder if they buy it from Jensen's smoke house #2 mentioned.

The U-District farmers' market: smoky slab bacon from Sea Breeze Farms, sliced maple-y bacon from Skagit River Ranch, or indulgent jowl bacon from Wooly Pigs.

Georgetown Truck Stop has some great thick bacon on their sandwiches. And they have bumperstickers praising bacon all over their little shop.

The bacon served at Portage Bay Cafe is very thick and peppery, if you're into that sort of thing. I think it's all organic and shit, too.

personally, i prefer the bacon at Red Mill, because it typically comes with two beef patties, lots of cheese, onions, lettuce and tomato. :)

I've always been partial to the bacon at Zena's on Madison. And if you go on Sundays you get to see people wearing their church clothes.

Zena's is real breakfast food, not that fancy hoity-toity nuveau cuisine crap they serve on Capitol Hill.

George's Sausage and Deli on 9th and Madison (half a block up from Vito's.) Smoky delicious Polish-style slab bacon, and they'll cut it as thick as you want. Fantastic stuff.

The bacon at my house, on Saturday or Sunday morning (Black Forest bacon from Foods' Whole). And if there's any left-over (fat chance) it gets sprinkled on the blue cheese salad dressing later that night.

Do you want uncooked bacon to cook yourself? Or do you want a restaurant cooking it up for you?

For uncooked bacon, wooly pigs jowel bacon is hard to beat. If you like thinner stuff nueske's bacon (available at metropolitan markets) is really good. I find skagit river ranch a little too lacking in smoke for myself.

The absolute best bacon is at my house though. I made 5 pounds of it from scratch this weekend.

Granted I have not been in Seattle for awhile, but a few years ago I had brunch at St. Cloud's in Madrona, and they have the best bacon I have ever had EVER.

Just finished eating some jowl bacon from wooly pigs. If you're ever in the mood for cooking some up at home, you can find their piggy stuffs at the u-district farmers market.

Oh, my god, Andrew makes his own bacon. If you see a guy standing outside your house sniffing, it's because you have a new stalker.

I have to admit I don't much care for restaurant bacon. I like my bacon undercooked and chewy, and I'm the only one who can get it just right.

When they hit it right (it's not always consistent), the Dish in Ballard used to do the best cooked bacon for brekkie around. Close to the crisp, light texture you'd get at home slow baking it in a low oven for an hour or so. Good fat/meat balance. Not soggy or teeth breaking, just crumbly crispy with honeycombed fat. mmmmm bacon.....

the family pancake house in Redmond and up at the summit has a bacon waffle. little bits of crispy bacon in the batter and then grilled to dimension defying perfection. Top with some real butter and real maple syrup and you've got a reason to go so far. go up to the pass and bring some snowshoes to burn off the meal and then repeat.

I second Portage Bay Cafe, though a lot of days I just don't want the pepper.

I do like the bacon at the 14 Carrot Cafe.

And also up in Bellingham where I spend half my weeks now, Arlis's usually does a good bacon, but the last time they overcooked it.

El Greco. It's nice and thick (they slice it themselves), made from good meat, and done with a press so it's flat and evenly cooked.

There's some variation depending on who's in the kitchen and how busy they are, I've had the best luck with Friday brunch. As a bonus, they've also got my favorite scrambled eggs in Seattle...

Geraldine's Counter down in Columbia City is owned by the same folks and has similar bacon, but I think the scrambled eggs are slightly different.

@ El Greco! Choose bacon in their "Broadway" breakfast and swoon. A close second would be the pepper bacon atop the Deluxe's BOA burger. Now you just have to figure out where to stop for lunch between those two places and you're set.

oh god, I'm in Istanbul and it took me a month to find bacon and when I did it was poorly cut, fatty, uncured and looked like it had been on the shelf for weeks. I really miss Hempler's. I miss BLTs. I miss bacon, blue cheese and avocado on mixed greens. I miss the smell of bacon permeating everything on Sunday morning.

i was fortunate a few weeks ago to receive a small slab bacon cured by the new chef at the artemis cafe.. i'm not sure if they've incorporated it into their menu yet but it's the best bacon i've had in YEARS..
for the best bacon cocktail get a manhattan at moxie's on queen anne which is garnished with a bacon lollipop..
who thinks of these things ?..
and a strong contender is the breakfast side pork they serve at monsoon's on 19th for weekend brunch ( it used to come with duck eggs over easy.. but now it's served alongside organic chicken eggs, and a side of brioche french toast..)

Patty's Eggs Nest- had it this morning- THICK cut, ALWAYS done a little crispy...but not CHARRED. And when you order a side of bacon- you get FIVE slices- not TWO like other lame places. I think since this is the 2nd recommendation- you should go there!
