I take it you haven't had Tacos de Cabeza (beef heads). The places that serve it usually also offer Sesos, Orejas, Ojos and Lengua (brains, ears, eyes and tongue. In the poorer parts of Mexiccan towns tacos made from beef heads are common. The heads are simmered overnight in large cauldrons and the meat is picked off the skulls in the morning and ready for the lunch crowd.
