And, if I pay the bill with a credit card, I still try to tip in cash directly to the server. I always get the feeling that restaurant owners will somehow screw their employees on tip payouts if I keep it on the card.

A cash tip also gives the server a better opportunity to not declare it on their taxes, not that I would ever advocate breaking the law like that.
