It's the nickname one of the owners uses for another of the owners (who's name is long and italian and starts with "scat-").

Two things:

Scat also = a rummy-style card game -- fewer cards than more -- where you can knock everyone else out of the hand with the supreme Scat ba-bam.

A racehorse is what you could own if it was dogs and the dog was a Doberman (named Scat Daddy, for example).

A Doberman is basically like the tiny dinosaur horse: On the hoof -- piece of cake, but without the arrow-shaped hooves.

99.9% of the modern world regards the word "scat," especially when used in combination with a term like "daddy" as jazz-not shit-related. Only people who receive piles of mail a day from sexual deviants see poo where they should see bop.
