Recipe of the Day:* Roasted Chicken

Ingredients:
Serves 2 as an entrée

One 2- to 3-pound free-range chicken
Kosher salt and freshly ground black pepper
1 bunch flat-leaf parsley
1 bay leaf
6 springs of marjoram
1 lemon, cut into wedges
1 shallot, peeled and sliced

Brining the chicken: Combine the chicken and 1 cup salt in a large bowl. Add water to cover and refrigerate for at least 1 hour.

Roasting the chicken: Preheat the oven to 500 degrees F.

Dry the chicken thoroughly, then season inside and out with salt and pepper. Place the parsley, bay leaf, marjoram, lemon, and shallot in the chicken’s cavity. Truss the chicken (tie the legs together use string or skewers). Place the chicken on a rack set inside a roasting pan.

Roast the chicken, uncovered, until the skin begins to brown, about 20 minutes, then reduce the temperature to 350 degrees F. Cover and continue cooking the chicken until the thigh juices run clear, about 20 minutes more. Allow the chicken to rest for 10 minutes, then carve and serve.

* I know it’s not really the season for roasted chicken, but this particular recipe is so good I make it all year. I recommend roasting the chicken on a “rack” of slightly parboiled potatoes.

Most (but not all) images on Creative Commons require some sort of attribution to the author of the work, depending on the license they were released under. I couldn't actually find this one in there anywhere, but unless it's under a different lisence from the standard ones, you should probably be crediting the photographer and not just Creative Commons as a whole.

All kidding aside, I've never understood the "spics are lazy" stereotype. Every Latino I know starts their first job at 6:00am, goes to their second 3:00, and the night cap at 10:00...

Has anyone ever tried using one of those racks where the chicken is more or less "standing up" while it roasts? They're wonderful.

#9 agreed. Some latinos have even adventured thousands of miles on foot mind you through all kinds of obstacles like even jungles and mountains and rebels and armies and manage to get into the country. Caucasians haven't done that since the 1800s when wagons went west. I see more folks in "busy society" content now to not make journeys like that in the whitemans world. The "hard working Businessman" has a jet and a computer to take him places and do things. The latino still uses his legs , arms and will to work and get someplace. I would say the Latinos are a very active people and always have been. More so than any could imagine.
