Why? Because while he's certainly a ratings draw, if he wins, it could potentially kill the show. If Howard Stern and others even manage to get him into the top 5 or so, people will go nuts fucking with the competition next season, and on and on. Once he starts sticking around while people with some degree of actual talent (it's all relative, of course) get booted, they'll push him... It's not a new phenomenon at all. Sanjaya may make it to top 5, but he won't go to the end, and there won't need to be any rigging involved.

The producers have rejected a lot of people over the years who were great singers but who lacked personality. They don't really have any reason to be pissed that the masses are voting for someone with lots of personality and not a ton of singing ability. And if they really want to curtail the mass voting for Sanjaya (or John Stevens back in season 2 or 3, who was a similar case - but not as fun), they could have made it so that only one vote can be made per phone number.

As much as the judges bitch about SanjayaGate, it's focusing a ton of attention on the show. It won't kill the AI behemoth, no worries.
