bethany, you should holler at the brioche rolls offered by macrina. they sell 'em by the four pack at metropolitan market, as well.

Why aren't there better, and more, bakeries in Seattle?
The only standouts I've noted are a few in the market, and one on 45th in Wallingford.
Maybe I just haven't been here long enough. Is there a single decent bakery anywhere on Capitol Hill? Your favorites city-wide?

Cannoli! That I can help you with: call il Fornio at Pacific Place (https://ilfornaio.com/?page=138&restaurant_id=3916) in advance and they'll bake you as many as you'd like. My picky Italian grandmother stopped making them when she learned that theirs were up to snuff enough for her pinochle parties.
Given that this city has both Paseo and Salumi, I refute your claim that it's hard to get a good sandwich in Seattle.
Not hard to get a good sandwich, hard to get a good sandwich ROLL (though I would argue that we're sadly lacking in great basic NY–style deli sandwiches—fancier ones, we got). These Essential Baking Co. "Rustic Buns" are essentially poppyseed kaiser rolls, hence my excitement—the bakeries hereabouts are lacking when it comes to the basics. Macrina, Boulangerie on 45th (run by the cutest man in the world), Le Fournil by the University Bridge are all good to great, but Macrina's too upscale to make an old-school sandwich roll, and the others are French. Belle Epicurean in the Fairmont is beloved for pastries. North Hill Bakery on 15th makes some nice biscuits/muffins/cakes, but again, no sandwich rolls. And they're closed on Sunday. ON SUNDAY. I got in a big fight with one of the owners about it once. STUPID.
There's a nice French bakery a block south of the University Street Bridge.
Bethany: Can you explain how doing the final bit of roasting breast-side down makes the need for brining obvious? I think maybe you meant eliminates, not obviates.

First of all, BJC, you know this is MY SUBJECT! Second of all, this still doesn't answer the question of where to find a good hard roll with nuts and berries in it. And third of all, these are not rolls but buns and they are clearly too big. A good hard roll leaves you hungry.
