Amy! I'm so glad you told me--I was just now sitting here thinking I should attempt it tomorrow to accompany christmas eve dinner. Instead I might just order some to-go.

I tried copying that dish at home a few times. I am convinced that it's impossible to do. Only Green Papaya can carmelize eggplant that well.
